This is not really a BibDesk issue but one of the style you're using.

In short: none of the traditional bibtex styles supports bookauthors (it least none did last time I checked), only biblatex does. So if you want to handle bookauthors properly, change to biblatex (which I can recommend anyway. Actually, it was the support for bookauthor which made me switch to biblatex originally).
