[OS X TeX] LaTeXiT producing blank output

Your file latexit-1.log is *not* the log file created when latexit-1.pdf 
was produced. The log file contains

> Output written on latexit-1.pdf (1 page, 11431 bytes).

However, your file latexit-1.pdf has 4 pages and 5660 bytes.
