Howdy,
Assuming that the output and log files produced by bibtexu are like those produced by bibtex and you are willing to use the latexmk engines supplied with TeXShop (but they have to be activated first---see the documentation and files in ~/Library/TeXShop/Engines/Inactive/Latexmk/ [where ~ means your HOME directory]) it should be easy. Add the line
$bibtex="bibtexu %O %S";
to the ~/Library/TeXShop/bin/latexmkrcedit file. (You must run one of the latexmk engines once for this file to get created.)
Please confirm that this works correctly to this list.
