Hi Daniel and Herb,
for me the problem has greatly diminished after switching to TeXShop 2.29 (and reinstalling Snow Leopard and MacTeX 2009 (because of the other problems I had), whether or not that matters). I think it has happened only once since then, when opening an old file, and the full toolbar came back after closing and reopening the document.

Daniel, I do have the printing, typesetting and BibTeX buttons on the PDF-viewer toolbar. Herb, you did ask about clicking on the lozenge before, but on my machine it never change the appearance of the toolbar. One more thing, to thicken the plot: the problem before seemed somehow connected with length of the file name: it occurred much more frequently with short filenames. That might of course be a coincidence.

Best,
Peter
