[OS X TeX] removal of unneeded languages

Though I wouldn't bother removing unneeded languages, if you install TL with install-tl, as I always do, you can define the symlink for the binaries and the man pages with the help of Local Switcher - read the instructions. 

This has the additional advantage that I never experienced the snags caused by an occasional OS upgrade and which have been reported on this list.
