How about creating a "User" folder in the Engine folder and the engines
placed there supersede the ones installed by TeXShop. That way if one
modifies a standard engine it will not be overwritten by a new version of
TeXShop. This will solve the problem that overwriting engines would cause to
folks that already have the engine hard-coded to a lot of their old
