[OS X TeX] XeLaTeX?

I am unclear on the level of compatibility between XeLaTeX and LaTeX. 
Will LaTeX files compile under XeLaTeX precisely as they would under 
LaTeX?  If yes, why does TeXShop not default to XeLaTeX now?
