[OS X TeX] fontenc/inputenc for non Latin scripts

Following my questions about fontenc/inputenc, I now wonder what are  
the possibilities for non Latin scripts ?

It looks like pretty much all the Latin based scripts are covered in  
fontenc/inputenc, but when it comes to CJK, Arabic, Thai ? How does  
Latex handle that ?

Do we need specific "engines" (like ptex for Japanese) or can  
"standard" Latex handle at least the monolingual side of the problem ?
