[OS X TeX] Pdf font issues with texshop

Friends,

Forgive me if this is a known issue. I have recently returned to Tex for
authoring after several years away, and am using the latest version of
TexLive with Texshop.  I am noticing when I typeset any document, that the
fonts change and often do not display properly in the pdf file created via
texshop when I typeset the same file multiple times.  For example, the first
time I typeset the document, I get the output (computer modern) I expect,
but the second time the same file is typeset, the typeset font is not
computer modern (on another font I have chosen), and often mathematics,
symbols, or enumerated items do not display properly.  This does sometimes
fix itself, but it is random.  Do you have any suggestions?
