Silly me! I seemed to remember

\newcommand*{\subject}[1]{\newcommand{\thesubject{#1}}

caused an error. It doesn't (provided the command \subject is used  
only once). I should have checked first.

And your suggestion

\newcommand{\thesubject}{}
\newcommand*{\subject}[1]{\renewcommand{\thesubject{#1}}

allows \subject to be used more than once.
