in many of the Universities where I work of have worked and where  
Apple's computers are present, Panther is still widely used, since  
they don't replace their computers every other year.

Maybe an easy(?) solution would be to keep the MacTeX-TeXLive 2007  
distribution alive for a while (one year?), besides the brand-new  
MacTeX-TeXLive 2008.
