I didn't pay attention to the fact that your question was about AMS- 
TeX, so to answer your specific question, you could edit your  
document with the editor of your choice, save the file to disk, and  
then open up a terminal and then type "cd " followed by dragging the  
folder where your file is located and then typing "enter".

Next, type "amstex <myfile.tex>" and it should use the AMS-TeX system  
to typeset your document.

you should be able to open the output with "open <myfile.dvi>" at the  
command-line, or to use another utility such as dvips or dvipdf to  
convert your file to postscript or portable document format, if you  
need to distribute the document.
