I can not speak for subversion servers on either system. Instead, if  
either of your colleges provides a UNIX system with subversion and  
will set up logins for both of you at a common site, that would IMO  
prove to be a far easier route to take.

 From my explorations for other projects, GUI Subversion clients on  
the WinXX systems are better developed than on the MacOS.

WinXX: TortoiseSVN at http://tortoisesvn.tigris.org/ is highly rated

MacOS: I use svnX at http://www.lachoseinteractive.net/en/community/ 
subversion/svnx/
although others are ZigVersion at http://zigzig.com/ and Versions at  
http://www.versionsapp.com/

As for instructions and tutorials on subversion, many exist - I have  
yet to find one good resource (though my use of svn has admittedly  
been limited).
