[OS X TeX] OT: looking for a public-domain EPS file editor

You are right, Illustrator outputs pdf as if A4 or letter on this side
of Atlantic. However all your conversions are not needed:

 You can use Acrobat to crop pdf file or   command-line  pdfcrop which
is a part of TeX distribution
