[OS X TeX] What's in Mac-TeX 2007 in general?

And especially on that page the link "What gets installed where",  
pointing to <http://www.tug.org/mactex/whatgetsinstalledwhere.html>.

Regarding your specific question about latex2html, you won't find a  
direct answer there. What the page says is that the full TeXLive-2007  
is included, the rest depends on whether TeXLive-2007 includes  
latex2html or not.

It seems it doesn't:

theo0mc234:~ brunovoisin$ which latex2html
no latex2html in /bin /sbin /usr/bin /usr/sbin /usr/texbin /usr/local/ 
bin

On the other hand the TeX4ht TeX-to-HTML system is indeed included:

theo0mc234:~ brunovoisin$ which tex4ht
/usr/texbin/tex4ht

As far as I understood, LaTeX2HTML seems not to have been updated in  
a long time (since 2001), while TeX4ht is still actively developed.  
If I remember correctly, its author, Eitan Gurari, is even a member  
of this list. Both systems are described in the "LaTeX Web  
Companion" (I only have the first edition, I don't know whether  
there's a second edition now).
