These two, xunicode and xltxtra, are other good and helpful resources.
\defaultfontfeatures{Mapping=tex-text}
is recommended. The contents of the {} could become contents of [],
i.e. the options when loading the fontspec package – or some font.
The following is rather recent code:
\setmainfont{Palatino}
There are other commands to set the sans serif or the typewriter font.
The fontspec documentation is worth reading.
