[OS X TeX] Linotype Palatino

Yes, it's that simple, but I bet the Palatino Michael has doesn't  
come with small caps. If he needs them, then pdfLaTeX with

\usepackage[T1]{fontenc}
\usepackage{textcomp}
\usepackage{mathpazo} %% as Bruno Voisin recommended, or

\usepackage{pxfonts} %% or

\usepackage{tgpagella}

but Adobe Reader or Acrobat won't identify them as Palatino.

Rather, Windows. OS X doesn't come with Palatino. The only Palatino I  
have is the one that comes (came) with OS 9 (which XeLaTeX can use,  
but as I said it hasn't small caps).

Windows indeed has Linotype Palatino.
