I mainly use emacs now, although I mainly used TeX for a few years.

During the extended period during which I used TeXShop as my primary
editor for TeX files, I used the following features regularly:

- LaTeX panel for math, symbols, section titles, international,
Matrix panel to set up tables. I wish the panel could be used outside
of TeXShop and sometimes I will use it when I can't remember how a
certain accented character is constructed.
- Templates for figures
- Tags menu to navigate my way around.
- When I first started (see below), the template for the article and
letter classes.
- The font customization template to see what different fonts look like.
- BibDesk autocomplete.
- Of course, cmd-T for typesetting, and the "typeset" button.
- Spotlight-based syncing.
- The Ogrekit find panel.
- The previewer (as opposed to TeXniscope or something else).

I started using TeX about 4 years ago for my dissertation. Now I use
it for almost all my writing, even for the web, by way of latex2html.
I started with TeX on OS X, with Gerben's i-installer and TeXShop,
which was the first editor I used with TeX. I would say that I used
TeXShop mainly when I was a complete TeX beginner to the point at
which I became a middle-intermediate-level user, where I am now. For
a while TS had stability problems so I switched away to Smultron,
which has better text coloring, but then I came back to TS when it
was better.
