I use a fairly limited set of features, but I use them a lot. I use text
macros with keyboard commands, especially for things like tt, emph and so on.
I also use them for adding in text citations. I don't use BibTex, preferring
to work with the raw library file.
I try to keep away from the menus as much as possible, and the panels. Instead
I use the keyboard commands to activate the regular functions, like building
indexes, bibliographies, etc.
I have only recently discovered Auto Completion and am not that experienced
with it yet.
I have a bunch of templates I use for everything from standardised table
formats to header data with all my favourite macros.
With long documents the Tags menu is invaluable, although a roll up function
would be helpful in this regard.

I would say that I am moderately experienced (I haven't forgotten more than I
now know ;)
I started using TexShop when it first came out and have stuck with it since. I
started using LaTeX in the mid-90's.
