Unfortunately, I am not yet ready to migrate away from TeXShop.

However, this made me realize what the issue is. In TeXShop, when you 
typeset, you automatically save and date-stamp. Which is a great thing 
except that when I am looking at a source for some reason and then 
decide I need to see the pdf, I of course hit [Typeset] rather than 
opening the pdf with Preview and thereby lose the date of the original 
Save. Come to think of it, this is of course what TeXShop's Open for 
Preview does! But then how about a button [Open pdf] in the Toolbar of 
the source to do that? Customize Toolbar does not offer it.
