http://darkwing.uoregon.edu/~koch/texshop/changes.html explains

	%!TEX TS-program = xelatex
	%!TEX encoding = UTF-8 Unicode
	%!TEX root = ../Main.tex

and gives more information. After Herb's findings I recommend also to  
use ``%%!´´ instead of the faulty ``%!´´ in order to not to trouble a  
PostScript printer when printing the source.
