It is the same with my download of TeXShop (the latest) on OS X 10.4.9;
English: none of the items in the pull-down menu TeXShop > Format > Text
has a shortcut. BTW, on my TeXShop

have no shortcuts.
Selecting

whatever is in the search buffer from a previous search.

Is it so on your set-up? I expect a prompt for replacement pattern like
the one with Cmd-F (but perhaps I am influenced by Emacs's search/replace).
I also find somewhat clumsy the pop-up sub-window for
Edit > Find > Find... (Cmd-F): some of the buttons do not react when
pressed despite that I have respective patterns in the text. It seems to
me that this happens when I attempt to repeat some of the find/replace
buttons.
