You can change this from the "Keyboard and Mouse" System Preference  
panel. Go to the "Keyboard Shortcuts" tab and click "+" to add a new  
shortcut. Select Bibdesk as the application and just type in "Special  
Characters..." (that's three periods, not an ellipsis). Throw  
something you find almost impossible to type in as keyboard shortcut;  
command-shift-control-option-t, say. Then restart Bibdesk and you  
should have your new "longcut" in place.
