You don't say, but I assume you are talking about syntax coloring in  
TeXShop. If so, then I recommend submitting a feature request at:

https://sourceforge.net/projects/texshop/

Many editors allow you, the user, to configure this (e.g., BBEdit),  
but TeXShop isn't one of them.
