There is a TeXLive Guide available as a pdf file which not only
describes the installation process in detail, but also contains a
chapter "Maintenance" which describes possible customizations for
dvips etc, and similar questions that all have been raised in the
past in this forum and which have been answered by various experts.
Here, you are offered the solutions in plain words. Implementing
these solutions will only require to switch the display of hidden
files on, and edit the corresponding configuration files in BBEdit
(maybe even TexTWrangler?).
Of course I hear the chorus of those crying that they can never do
this, but then they also will never be able to do it when they obtain
the advice from this list.
Remember I referred to individual customization of configuration files.
