Check it in Printer Setup Utility (Drucker-Dienstprogramm)! Here it
should be listed with its proper name and which type of printer it
is, i.e. your <printer queue name> in one column and something
printer and model and engine specific like "Xerox Phaser 3500 DN PS
v3010.106" in the next one.

Me too! I only have these for my printer:
-rw-r--r-- 1 root lp 42077 26 Jul 15:08 /private/etc/cups/ppd/
EPL-5800.ppd
-rw-r--r-- 1 admin admin 42077 27 Okt 2002 /usr/share/cups/model/
EPL-5800.ppd

Simpdftex --help gives some pointers. I think it's 'simpdftex latex
<latex file>' or 'simpdftex tex <tex file>' + any of the extra
options. Or, by hand:
(la)tex -output-format=dvi <(la)tex file>
dvips -o file.ps file.dvi
ps2pdf file.ps
