Unfortunately, the Pantone colour picker didn't survive Apple's  
acquisition of NeXT (it was nice though, always having Pantone  
available, even in a word-processor app).

I theory one could hack this using pdfliterals, but I've never seen  
it set up (and would also be very intersted in it).
