[OS X TeX] Handling EPS files

In order for the pdf files to be produced you need to typeset with pdftex
not TeX& Ghostscript from TeXshop.
Put all your .eps files in a separate folder with the correct pathname
when you use \includegraphics{}
Do -not_ use extensions.
and look at the *Template* that TeXshop provides on graphics and include 
the
\usepackage{epstopdf} in your preamble.

All the pdf files should be generated.
One caveat.
If you have any old versions of hyperref lurking around in your own 
library you could get errors with one of the files that come with it
(can't remember which one now).. 
Remove/Hide all private copies of packages that are provided by gwTeX.

At least, this procedure seems to work for me.
