Yes but, while I found where to insert

    & "xxxxxx" & return

in the macro to get

    \begin{center}
              xxxxxx
              \begin{tabular}{@{} ccc @{}}
              etc

when I replace xxxxxx by \catcode`\•=\active \def•{} I get the 
Applescript Error:

    Expected """ but found unknown token.

(The old story …)
