[OS X TeX] Texshop and file.pdf

Hello

1) Why when I open a file.pdf with Texshop, i've always an alert :

This file was opened with MacOSRoman encoding ???

2) with Bash when i use : cat >temptex.tex<<EOF how to control the  
encoding ?
it is a variable of environment but which one ?

$ set
  gives this :

LANG=fr_FR.UTF-8
LC_CTYPE=en_US.UTF-8
__CF_USER_TEXT_ENCODING=$'0x1F5:0:91\n' ???
....
