TeXShop uses simpdftex to convert DVI to PDF (from my console.log):

	### This is /usr/local/teTeX/bin/powerpc-apple-darwin-current/
simpdftex, Version $Revision: 2.18 $
	### Skipping latex  [dvi->pdf only]
	### /usr/local/teTeX/bin/powerpc-apple-darwin-current/dvips -R -
Poutline  -o /tmp/altpdflatex.14108-1153334936/Datei.ps Datei.dvi
	This is dvips(k) 5.95b Copyright 2005 Radical Eye Software
(www.radicaleye.com)
	' TeX output 1997.08.20:1711' -> /tmp/altpdflatex.14108-1153334936/
Datei.ps
	...
	### Saving intermediary ps file /tmp/altpdflatex.14108-1153334936/
Datei.ps as Datei.ps
	### /usr/bin/pstopdf /tmp/altpdflatex.14108-1153334936/Datei.ps /tmp/
altpdflatex.14108-1153334936/Datei.pdf
	### Copying/moving pdf file /tmp/altpdflatex.14108-1153334936/
Datei.pdf to Datei.pdf
	### Succesfully generated Datei.pdf and Datei.ps

As you can see it saves the PS output according to my preferences,
and it uses Apple's "distiller" according to my preferences. The PS
and PDF files are copied into the directory where the DVI source is.

If the directory with the DVI file is not writable, a new directory /
tmp/TeXShop_Output is created. I am also missing the PDF files ...
lsof finds:

	TeXShop 14105 pete txt VREG stat(/
private/tmp/TeXShop_Output/dies.pdf): No such file or directory
	TeXShop 14105 pete txt VREG stat(/
private/tmp/TeXShop_Output/das.pdf): No such file or directory

So the files seem to be deleted after TeXShop has read them ...

We are usually convinced more easily by reasons we have found
ourselves than by those which have occurred to others.
