Do you mean .. (the two dots)? .. takes you up one folder. So if you  
have

BookFolder:
	GraphicsFolder:
		SomeFancyPicture.png
	TextFolder:
		yourTeXFile.tex

you can use \graphicspath{{../GraphicsFolder/}} % note the two dots (..)
in your .tex file and write \includegraphics{SomeFancyPicture}
