[OS X TeX] Suggestions about input encoding - utf-8, latin1, latin9??

Just my 0.02$

I use utf8x as encoding and before I tried the soul package I didn't  
have any problems and I use a lot of packages in my PhD thesis. From  
my experience, utf8 is fine most of the times, soul was the only  
exception so far.
