[OS X TeX] LaTeX editing environments

Hello,
The recent messages about vi, vim, emacs, TeXShop, ... show clearly
that every LaTeX user has a strong opinion concerning what he thinks
to be the "best" LaTeX editing environment.
It is obviously a matter of taste and a solution which is good for
one user will not be well suited to another.
However, I think it would be very useful for newbies to know what are
the competing environments. This way they would be able to test them
and choose the one he likes best.
So, it would be interesting if the proponents of vi, vim, emacs,
TeXShop, ... could describe precisely how they configure their editor
for best usage with LaTeX.
In particular, it would be usefull to gather information on how to
setup a system of "placeholders" or "bullets" to speed up commands
and environments insertion for the various editors.
