[OS X TeX] TexShop engines make me crazy

OK, same thing than with the other answer, I'm actually not trying to  
do the latex+dvips+gs, that's what I used to do but I want directly  
pdftex now... How do I do that? And the --shell-escape is probably me  
blindly following what I saw in some archived file from the mailing  
list...
