[OS X TeX] OS X TeX newbie needs help installing TeX on non-boot volume

Hello,
My subject line says it all. I've been using OzTeX for a while (since
System 6.0.7 was the latest and greatest) and I've got CMacTeX for
pdfTeX these days. I've looked at what one can apparently do with a
modern OS X TeX setup and thought `I want some of that'. So I tried to
install a teTeX based TeX and hit a brick wall: I can't work out how to
install things in non-standard places.
What I did manage to get is i-Installer, and I've managed to use it to
download the following (I'm not sure I've got a use for all it, but with
a slow internet connection I thought I'd grab it all so anything I
*might* need would be there when I wanted it):
ImageMagick.ii2 ghostscript-8.ii2 musixtex.ii2
Xaw3d.ii2 gv.ii2 netpbm.ii2
autotrace.ii2 jpeg.ii2 pfaedit.ii2
bibtool.ii2 latex2rtf.ii2 rtf2latex2e.ii2
cb-greek.ii2 lcdftypetools.ii2 tex.ii2
cm-super.ii2 libpng.ii2 ttf2pt1.ii2
context-update.ii2 libtiff.ii2 wvWare.ii2
fondu.ii2 libwmf.ii2 xfig.ii2
freetype2.ii2 macutils.ii2
What I'd like to do is install everything I need on a volume other than
the boot volume (I keep all added software and user data off my boot
volume for safety's sake - at least, in those cases where I can work out
how to do this safely). I've read the documentation I can find and
can't work out how to do this.
Can anyone help me install `TeX and friends'?
I'm using MacOS 10.3.9 on a 1.25GHz 2G4 (last of the OS 9 bootables).
