I've released two LaTeX tools that may be of interest to this list:
AquaTkbibtex, an "Aquafied" version of tkbibtex by Peter Corke, with
support for drag-and-drop opening of .bib files, enhanced printing
support, integration with LyX/Aqua, and more. For more information:

latex2applehelp, a set of tools for converting LaTeX source files to
correctly-tagged, attractive Apple Help books. More information:

Both programs are released under the GPL.
