pstopdf is an apple installed tool which lives in /usr/bin

For the rest however: "it depends", answer these questions, and we'll  
get you there:

Q: how did you install TeX? If you used the i-Installer, then I would  
suggest you install the ghostscript package, and let it configure the  
path for you.

Q: Which OS version, or more to the point: which shell do you use?
