You need to Ctrl-Click on TeXShop to view the package content, and  
then navigate to Contents/Resources/English.lproj/MainMenu.nib.  
Double-clicking on this file opens it in Interface Builder (provided  
you've installed Xcode), where it can be edited. But you've got to do  
this for every language you use.

And yes I agree this feels very much like ResEdit. I tried this for  
the first time today, and it brings back this feel-good impression of  
the former Mac OS 9 days, of the time when, without being a developer  
or having to compile, you could modify applications to get them to  
behave exactly the way you liked.

The only thing that's missing is the little animation from the  
ResEdit splash screen, which was fun to look at.
