Well, looking at the file EncodingSupport.m in TeXShop's source code
it seems there is no provision for Windows Latin 1 encoding in
TeXShop's editor, and only the 24 encodings appearing in the pull-
down menu are available.

However there exists indeed a corresponding string
NSWindowsCP1252StringEncoding in Apple's Cocoa API <http://
developer.apple.com/documentation/Cocoa/Reference/Foundation/
ObjC_classic/Classes/NSString.html#//apple_ref/doc/uid/20000154-35474-
CJBIAHGF>, which seems to indicate it should be possible to modify
EncodingSupport.m to add this encoding to TeXShop. I won't venture
into recompilation though.

It would be nice to have a modifiable list of recognized encodings,
as in TextEdit (at Preferences > Open and Save > Plain text file
encoding), or maybe to have TeXShop inherit its list of encodings
from TexEdit.
