[OS X TeX] Fine tuning "captions"

Hi,

I have two documents that look identical in every detail as for the 
preamble and the way tables are constructed.

Yet one says "Table 1: Here is the caption." whereas the other says 
"Tab. 1 - Here is the caption."

I can't figure out how to control the beginning of the caption, Table 
vs Tab, punctuation, etc.

Both were obtained with the article class.
