Have you looked into the Calendar mode of emacs? M-x calendar will 
bring up calendar mode, if you then hit "t w 1", it will generate latex 
source for a one-week-calendar. Check the emacs help for Calendar mode, 
there is a topic about LaTeX Calendar.
