[OS X TeX] Default Truetype Fonts?

Yes, because updmap always creates both maps for pdftex,
pdftex_ndl14.map and pdftex_dl14.map. pdftex.map can become nothing
more than a helpful hint of what's the standard you always can deviate
from.
I bet, when you create in the same directory where your tex file is a
symlink pdftex.map pointing to pdftex_ndl14.map none of that fonts
would be embedded although your standard is to embed them.
The actual difference in the files is that one tells pdftex the name of
the PS font file and to include it:
pcrr8r Courier "TeXBase1Encoding ReEncodeFont" <8r.enc <pcrr8a.pfb
vs.
pcrr8r Courier "TeXBase1Encoding ReEncodeFont" <8r.enc
