You can also remove the shortcuts yourself using the defaults command 
(man defaults) in Terminal.app:

$ defaults write TexShop NSUserKeyEquivalents -dict-add Bold nil
$ defaults write TexShop NSUserKeyEquivalents -dict-add Italic nil

Since this modification is stored in TexShop's preferences 
(~/Library/Preferences/TexShop.plist), it will continue to work when 
you update TexShop (unlike the Interface Builder method).
