But it is already possible. If you save it has a PDF file (just by
drag'n dropping onto the Finder, for instance), it is equivalent,
since the file re-opens in LaTeXiT with all the meta-contents
(preamble, source code...)

And a library can also be saved (Library > Save)

Since the preamble it saved along with the equation (you can access
the preamble by LaTeX > Show preamble), it is not really important to
offer a set of predefined preambles. A default one is largely
sufficient for most use cases, since it can be tuned as much as you
want.
