[OS X TeX] Version control of documents in TeXShop

BBEdit has a "Make Backup Now ..." function in the File menu. It can  
be set to write the file to any folder of your preference. It  
automatically appends the date to the document name for you. BBEdit  
can be set up to write a backup with each save, but after while you  
accumulate a huge number of files. Instead, I use the Make Backup  
Now ... to make a backup once per day, or prior to doing a Replace  
All that I'm not certain is fool proof.
