[OS X TeX] TeXShop and Page Setup...

Yes. I was under the impression this was a Cocoa thing, not specific to 
TeXShop.

No. Unfortunately. That was one of the good things of Mac OS Classic 
(i.e. document-specific info stored in resource forks).
