[OS X TeX] TeXShop and BibTeX

You could, but I would suggest you don't. (search the list archives for 
.MacOSX/environment.plist to see why).

What I do, and does not require changes to the environment is the 
following: ~/Library/texmf/bibtex/bib/ and ~/Library/texmf/bibtex/bst/ 
are in the default search path, and if you place a symlink (ln -s 
original.bib ~/Library/texmf/bibtex/bib/) in the right location, the 
file will still be found. You cannot move the file from then on (IIRC).

In my experience this is less fragile.
