I don't think that whether it's Garamond or Hoefler should make any
difference.

This declaration is for AAT (Apple Advanced Typography) fonts, like
Hoefler, whereas Garamond, as shipped by Adobe, is, I think, an
OpenType font. For them, the above syntax does not work. You should try
instead:

I don't think that will work. XeTeX does not use the PostScript
language: it creates an .xdv file (extended .dvi), then launches behind
the scene its own converter xdv2pdf producing .pdf output directly.
