In my .emacs I have the following long story, adapted from
somebody's web page:

(set-language-environment "Latin-1")

(require 'ucs-tables)
(unify-8859-on-encoding-mode 1)
(unify-8859-on-decoding-mode 1)

(create-fontset-from-fontset-spec
  "-apple-monaco-medium-r-normal--9-*-*-*-*-*-fontset-monaco,
  ascii:-apple-monaco-medium-r-normal--9-90-75-75-m-90-mac-roman,

latin-iso8859-15:-apple-monaco-medium-r-normal--9-90-75-75-m-90-mac-roman,

latin-iso8859-1:-apple-monaco-medium-r-normal--9-90-75-75-m-90-mac-roman")

(set-frame-font "fontset-monaco")

(add-to-list 'default-frame-alist
 '(font . "fontset-monaco"))
